Real Cider is made by fermenting pure, fresh pressed apple juice with live yeast for around 6 to 9 months. Real cider and perry contains benefitial nutrients derived from whole pressed fruit - apples or pears. Whereas manufactured or artificially made 'cider' is usually made from processed concentrates, coloured or flavoured water, the process takes just a few days.
Real Cider is often served 'Still' like wine however carbonation of sparkling ciders is achieved naturally through bottle conditioning.
The UK's Small Independent Cider Makers Association (SICA) definition includes a National Quality Mark of there being at least 90% fresh juice in real cider or perry.
